Doing nothing is part of the plan
When you come to the Hérault, the list of things to see and do can quickly become a long one.
Wander through the historic streets of Pézenas, discover Béziers, head to the Mediterranean beaches around Cap d'Agde, explore Lac du Salagou, or simply take the road and discover the villages and landscapes along the way…
But holidays are also about knowing when not to make plans.
At Les Gîtes de Monte Blanco, in Montblanc in the Hérault, we are fortunate to be located almost at the heart of the triangle formed by Pézenas, Béziers and Cap d'Agde, between heritage, vineyards and the Mediterranean.
And here, in our former wine estate, there are plenty of places made for slowing down.
Sit on the bench in the shade of our magnificent century-old cedar tree.
Enjoy a game on our pétanque court… or simply watch the others play.
Relax on a sun lounger beside our heated swimming pool.
Linger on the terrace as the sun begins to set and the heat of the day gently fades.
Surrounded by old stone walls and Mediterranean planting, there is no need for a schedule or a plan. Just take your time.
We love helping our guests discover the Hérault, recommending our favourite places around Montblanc and sharing our best addresses, from Pézenas and Béziers to the Mediterranean coast.
But sometimes our best advice is much simpler:

🍯 Why the Honey at Our Breakfast Table Tells the Story of Monte Blanco
Every morning, when we prepare breakfast at Les Gîtes de Monte Blanco, we enjoy introducing our guests to some of the local flavours that make our region so special.
One of them is our locally produced lavender honey, harvested just a few kilometres from our home.
But this honey is much more than a delicious local product.
It also tells a story... one that we love sharing around the breakfast table.
🐝 An Unexpected Arrival...
It all began in the spring of 2024.
At the time, we were busy renovating Le Ramonetage, one of our holiday cottages. Our days were filled with dust, tools and the sound of building work... until one very different noise caught my attention.
A loud buzzing.
Stepping out onto the balcony, I saw what looked like a huge black cloud swirling above the garden before disappearing into our old plane tree. The tree was already dead and we had planned to remove it during the following winter.
A swarm of bees had simply decided that Monte Blanco would become their new home.
Throughout the summer, the bees remained there peacefully. They shared the garden with our guests without ever disturbing anyone. Most visitors had no idea that an entire colony was living just a few metres from the swimming pool.
🌿 A New Home... Among the Lavender Fields
Before removing the tree in autumn, we wanted to make sure the bees would be safely relocated.
So we contacted a local beekeeper, who carefully collected the swarm and explained that he keeps several apiaries in different natural environments depending on the season: forests, heathland, wildflowers... and, of course, lavender fields.
That conversation inspired us.
Today, the lavender honey we serve at breakfast comes from this very beekeeper.
Not only because of its delicate floral flavour and smooth texture, but because it perfectly reflects our wish to introduce our guests to the people and producers who bring our region to life.
😊 A Wonderful Coincidence
The story could have ended there.
But a few months later, when Katy started working for Cerfrance, she discovered that this very same beekeeper had become one of the clients whose accounts she would be managing.
Sometimes the world really is a small place...
🍯 More Than Just Honey
Looking back, we realise that this little swarm left us with far more than a memorable story.
It reminds us of a time when Monte Blanco was slowly coming to life, through renovations, new encounters and all those little moments that have shaped the soul of our home.
Whenever we place that little jar of lavender honey on the breakfast table, we often tell this story to our guests.
Because staying in a bed and breakfast is about much more than a comfortable room or a beautiful swimming pool.
It is also about discovering a region through the people who live and work here: beekeepers, local producers, artisans... and sometimes through a story you could never have imagined.

When the Small Details Make All the Difference
A few days ago, we found ourselves asking a simple question.
What truly gives Monte Blanco its soul?
Is it the swimming pool?
The rooms?
The garden?
The peaceful atmosphere?
Then we remembered something a German guest said to us before leaving:
"Everything has been thought through. Every single thing is exactly where it belongs."
At the time, we simply thanked him.
But those words stayed with us.
They made us realize that the soul of a place is never created by one spectacular feature alone.
Because, in the end, a memorable stay is not only about what you see. It is also built on everything you barely notice.

Sometimes, one evening says everything about a place
Guests sometimes ask us whether we also get to enjoy Les Gîtes de Monte Blanco ourselves.
The answer is simple: during the summer season, not very often. Our days are filled with arrivals, departures, breakfasts, conversations with our guests and all those little details that make life in a guest house so special.
A few evenings ago, however, we were unexpectedly given a little moment of our own.
Some of our guests were attending a wedding, while others had gone to Montblanc's village festival. We had planned to join them too.
Instead, we settled down on the sun loungers.
A cocktail in hand.
The sound of cicadas.
A gentle breeze moving the branches of the old cedar tree.
One refreshing swim... then another.
In the end, we never left.
Because sometimes, a single summer evening is enough to remind you why you fell in love with a place.
Just a few minutes from Pézenas, Béziers, the Mediterranean beaches, the vineyards of the Languedoc and the Canal du Midi, Les Gîtes de Monte Blanco are the perfect base to discover everything the Hérault has to offer... or simply to slow down and enjoy doing nothing at all.

Le Pressoir: A New Life Without Forgetting Its History
Just a few years ago, it was hard to imagine that this former wine press building would one day become a holiday home.
When we took over the estate, the stone building still bore the marks of its winemaking past. It had remained frozen in time, filled with old equipment and spaces waiting to be reinvented.
Then came the renovation. After weeks of planning, dust, demolition and rebuilding, a terrace on stilts, a private swimming pool and welcoming living spaces gradually took shape, while preserving the charm and authenticity of the old stone walls.
Today, Le Pressoir welcomes families and friends looking for peace, sunshine and relaxing moments around its private pool.
When we look back at the first photographs, we sometimes struggle to believe it is the same place. Giving this building a second life while preserving its soul is undoubtedly one of our greatest satisfactions.

I Had to Wake Him Up!
Some guests leave us with particularly fond memories.
Among them are Roland and his wife, who chose to stop at Les Gîtes de Monte Blanco on their way to Castres.
As soon as he arrived, Roland smiled and told us:
"I never sleep much. I'm usually awake around 6 a.m."
As breakfast is served between 8 and 10 a.m., we simply showed him how the coffee machine worked so he could help himself if he woke up as early as expected.
The following morning, while we were preparing breakfast, his wife came downstairs with a smile:
"I had to wake him up! Roland, it's already 8:30 and you said breakfast was at 8!"
The scene made us smile. The man who claimed he never slept had just enjoyed a real lie-in.
A few days after returning home, Roland left us this review, which we have always kept with great affection:
"Here is a house that offers all the richness and serenity of its wine-growing past, with its generous spaces, Art Deco cement tiles, wrought-iron railings, marble fireplaces and cool shaded corners.
It is also a house whose new owners have embraced the future through an elegant and impeccable restoration, accompanied by the gentle sound of the swimming pool.
You sleep like royalty here. At breakfast, Katy's homemade pastries are a daily triumph.
In short, you are welcomed by people whose first concern is your well-being. They are attentive and caring, always present without ever being intrusive.
Two nights of genuine rest. A stopover in the truest sense of the word."
Beyond the kindness of these words, one sentence touches us more than any other:
"You sleep like royalty here."
Because beyond the renovations, projects and daily life of a guest house, our wish remains the same: to offer every traveller a peaceful and restorative escape.

📍 20 years of transformation at Monte Blanco
Some photos say more than a long story.
Looking at these images, we realise just how far the estate has come. Behind every restored stone, every renovated façade and every redesigned space, there have been years of work, projects, doubts at times, but above all one guiding idea: preserving the soul of this place while giving it a new life.
Between the first photos from 2005, those taken when we arrived in 2023, and the images of today, the estate has changed deeply.
Le Ramonetage has become a warm and welcoming holiday cottage.
The outdoor areas have been transformed into places to relax and share.

Yesterday, we had the pleasure of meeting with the wine tourism representative from the Béziers Méditerranée Tourist Office to discuss the many wine experiences available in our region.
Because beyond the old stones, gardens and swimming pools, staying at Les Gîtes de Monte Blanco, a renovated former wine estate in the heart of Montblanc, also means discovering a land deeply shaped by vines and the southern French way of life.

Details that tell the story of the estate
During the renovation of Les Gîtes de Monte Blanco, we found several old objects that had belonged to former owners of the estate.
Among them was this old iodine tincture bottle, now reused as a fragrance diffuser in one of the rooms.
While exploring the house further, we also discovered old plaques bearing the name of Edmond Sicard, a doctor and owner in Montblanc.
A discreet trace of the estate's past, which we chose to preserve and naturally integrate into the house.
At Les Gîtes de Monte Blanco, we love keeping these details that give soul to this renovated former wine estate, blending history, authenticity and contemporary elegance.

After buying the house, a new adventure began: the renovations.
Little by little, room by room, the property started to transform.
Cleaning, repairing, repainting, sometimes demolishing… and often rebuilding.

Act 1 – The spark: how Monte Blanco became an obvious choice
Some decisions take years to mature.
Others happen in just a few minutes.
In 2022, we both needed air.
Light.
Sunshine.
During a stay in a guesthouse that August, something shifted.
What if we changed our lives?
We started looking at the South of France.
Visits. Projections. Doubts.
Then one day, almost by chance, we visited this house in Montblanc.
Without much expectation.
The visit was supposed to last one hour.
It lasted more than two.
Each of us walked through the house quietly, imagining what it could become.
At the end, our friend Frédéric — who came to keep us grounded — simply said:
""This is your house. It looks like you.""
We looked at each other.
And we knew.
A few days later, we made an offer.
Monte Blanco had just begun.

🏗️ When you can’t see it… it means it’s done right.
This week, we completely rebuilt the junction between the ""Chambre Bleue"" and its future private bathroom.
There was no clean transition between the two spaces.
Everything has been redone: framing, alignment, finishing structure.
In a few days, once the jointing and painting are complete, it will be impossible to tell that this doorway has been entirely recreated.
A successful renovation is the one you don't notice.

In December, Béziers is transformed and offers this year a truly immersive illuminated trail, inspired by the world of mountains and winter.
Along the avenues, visitors discover a ski resort setting: an arch marking the starting point, illuminated cable cars, glowing skiers lining the route, all the way to the arrival area symbolized by a large sparkling Christmas tree and musical illuminated fountains resonating with Christmas carols.

We have created a brand-new area around the boulodrome: synthetic turf, fresh planting, and—our favourite part—the restoration of an old iron bench discovered during the renovation of Le Pressoir. After decades forgotten on the property, it will soon begin a new life under the shade of the magnificent cedar tree.

Although recently completed, the exterior of Le Pressoir is still being refined: painting, lighting, planting… Every detail matters to offer guests a calm, elegant and welcoming setting from the very first moment.
